Easter baking for the family

The Merrick team has been tasked with attempting some Easter baking this week. One of the team had a go at making chocolate crispy cakes and has shared the recipe below. These tasty treats are super quick and easy to make and are a perfect weekend activity for families who don’t mind getting a bit messy! The recipe we have used is from the BBC GoodFood website and calls for four ingredients:

  • 50g butter
  • 100g milk or dark chocolate (broken into chunks)
  • 3 tbsp Golden Syrup
  • 100g Cornflakes (or other plain breakfast cereal)

If you want to make these even easier, you can melt whatever chocolate you have in your house and add in your cereal until it is all coated with chocolate. Then transfer to cupcake cases and chill until they set – delicious! We wanted really gooey nests so instead started by melting the butter, golden syrup and chocolate slowly in a saucepan.

Once the other ingredients have melted, you can add in your cornflakes and mix everything until the cereal is evenly coated in the chocolate mixture.

Next, transfer the mixture into cupcake cases. Now is the time to add any decorations you want, we went for chocolate eggs to fit the Easter theme.
